Roasted Beets

Ingredients

-Raw beets - I did two bunches, 1 red, 1 orange

-EVOO

-Juice of an orange

-3 TB of EVOO

-Kosher salt

-Black pepper

-Goat, burrata or feta cheese

-3-4 cups of arugula or butter lettuce

Cooking Instructions

Cut the greens/leaves off each beet, right up to the beet itself, but don't throw them away. Wash the beets well and add them to a Pyrex or cast iron skillet. Cover skillet tightly with foil. Heat oven to 375 degrees, cook beets for 1.5 hours. Remove, let cool. Peel them and slice them in bit size pieces. Add them to mixing bowl, add EVOO, salt, pepper and juice of orange.

Serve on bed of lettuce/arugula and crumble up pieces of cheese. Add more EVOO, if needed and S&P.
