Grilled Artichokes
Ingredients
-2 whole artichokes
-2-3 TB of EVOO
-handful of kosher salt
-handful of black pepper
Cooking Instructions
Cut off the top inch or so of each artichoke. Next, start at the stem of the artichoke and trim each leaf on the top with a scissors to remove the spiky point. Once finished, rinse artichoke well under cold water, slightly pulling open from the inside to get water throughout.
If you have an Instant Pot (easiest way), place artichokes in IP, with 1/2 cup of water, set on Pressure Cook high for 15 minutes. Let sit for 5 min. once complete, then release all pressure. Cut the artichokes in half starting from the bottom stem. With a sharp knife, clean the hairy part out of the bottom by the heart, remove any loose leaves from that area. You should have a little bowl in the bottom of each half. Toss the 4 halves in a bowl with the EVOO, salt and pepper. Light grill, set to medium heat level and grill on each side 4-6 minutes, just to add some color.
Serve with aioli or make your own. Last night, I did a cup of mayo, couple TBs of dijon mustard, juice of half lemon and a few dashes of hot sauce. And of course, some salt and pepper.
Pull each leaf off, dip the bottom in the aioli, then scrape off the meat pulling through your teeth. Once done with the leaves, fight your family members for who gets the heart!
**if you don't have an IP, put the artichokes in a large stock pot with about a cup of water and simmer with lid cracked for 1 hour. **
