Caesar Salad

Ingredients

1 head Romaine lettuce

1 bag pre-made croutons

3 cloves garlic, minced

2-3 anchovy fillets (YES, you have to use this)

1/3 lime, juiced. Usually results in about 2 Tablespoons.

1/2 tablespoon Dijon mustard

1 egg yolk

12 drops Worcestershire sauce

6 drops Maggi (you will probably have to Google this and grab at store or Instacart)

3/4 cup extra virgin olive oil (some use grapeseed oil)

Cooking Instructions

Chop anchovy filets up very fine. Add with garlic in a large wooden salad bowl and crush together, add the Dijon mustard egg yolk and the Worcestershire sauce, mix well. Add the Maggi sauce, the olive oil and mix again until all ingredients are creamy. Add 3 drops of white vinegar and the lime juice and mix well again. Toss with Romaine lettuce and croutons. Many add Parmesan cheese. Fine, if you must, but it's much better with Cotija cheese. Enjoy!
