Uncle Tito or Tito Friday Smoked Salmon

Ingredients

1 cup brown sugar

1 tbsp black pepper

1 tsp garlic powder

1/2 cup coarse salt

1 cup vodka (TITO'S is my name)

1.5 lbs to 2 lbs wild salmon

Cooking Instructions

In a bowl, whisk together brown sugar, pepper, salt, and vodka. Place the salmon in a large re-sealable bag. Pour in the marinade and massage (easy there big guy) into the salmon.

Refrigerate for 2-4 hours. Remove from bag and dry with paper towels.

**If you have a smoker, use the first instructions below, if baking, use second.**

Smoker:

When ready to cook, start the Traeger or comparable smoker on “smoke” setting. Keep on the “smoke” setting and smoke salmon, skin-side down, for 30 minutes. Increase grill temperature to 225 degrees. Cook salmon for an additional 45 minutes. Serve with lemons and capers.

Oven:

Preheat oven to 425 degrees. Set salmon skin side down on non-stick baking sheet. Baked until salmon is cooked through, 12-15 minutes max! Yes, lemons for sure.
