Goldfish Chicken

Ingredients

1.5 lbs raw chicken tenders

1.5 cups flour (add more if needed, I’ve never measured)

2 eggs beaten

1.5 cups cheddar Goldfish (Cheez-Its will do too!) - pureed. Again, never measured, but should be good, add more if needed.

1 cup Ruffles or pretzels or something in the chip category, pureed. Last time I used Salt and Pepper Kettle Chips, unreal! If you have them, go for those! Again, never measured, but should be good, add more if needed.

Salt and pepper to taste

2 cups frying oil

Cooking Instructions

Set up three deep plates or large bowls in the following order - 1. Flour 2. Beaten eggs 3. Pureed Goldfish, chips/pretzels with salt and pepper in the mix.

Dip each chicken finger in the flour, then egg, then Goldfish mixture. Use 1 hand for dry, 1 hand for eggs. Or else it’s a mess! Repeat until all chicken tenders are breaded.

Separately, heat 2 cups of oil (canola, vegetable, peanut, something with a high smoke point) in a cast iron skillet. I set to medium and let it go 7-10 minutes to be sure it’s hot. Fry 4 or so chicken tenders at once, turning after 2 minutes or so per side, total cooking time around 8 minutes. Repeat until done. Add more oil if necessary.

Let cool a few minutes and serve!! Yes, adults, you can eat them too, but serve those kids first, home schooling is tough!
