Catalan Tomato Bread
Ingredients
8 large slices country-style bread, about 1/2 inch thick
1 full head of garlic, pre-roasted in oven
2 very ripe tomatoes, roasted lightly on grill and halved crosswise
EVOO
Coarse sea salt
Freshly ground pepper
Cooking Instructions
Light the grill. When the fire is medium hot, roast the whole tomatoes for 4 minutes per side, set aside to cool. Then grill the bread for 2 minutes per side, or until nicely browned and crisp. Spread 2 cloves of roasted garlic on each piece of bread. Next, take half the tomato and rub generously on bread. (The idea is to apply a thin film of tomato on the bread). Then drizzle the toast with EVOO, and sprinkle on some salt and pepper.
