Campas Crispy Tacos

Ingredients

1 lb of ground beef or turkey (if you must)

Pack of taco seasoning or. . .

1.5 TB of chile powder

1 TB kosher salt

½ TB of cayenne powder

1 TB of cumin

½ TB of paprika

½ TB of garlic powder

½ TB of Mexican (or regular) oregano

20 soft corn tortillas

2-4 cups of canola or vegetable oil

Iceberg or romaine lettuce, chopped

2-3 cups of grated cheddar cheese

1 large red tomato

Sour cream

Cooking Instructions

Sauté the ground meat in a large skillet, add seasoning, or seasoning pack. Once browned, add ½ cup of water, continue to mix and simmer until water absorbers into the meat/seasonings. Set aside.

In a cast iron skillet, start with ½ cup of oil and heat to just above a medium heat. Take one corn tortilla and add two scoops of a regular small kitchen spoon of ground meat. Next, fold in half and gently lay in oil. After about :45 seconds, with tongs, flip taco over. Repeat this until all meat is gone. *Note – heat the oven to around 225 degrees and after about every taco, add to oven on a baking sheet with paper towels to stay warm.

Serve tacos with diced tomatoes, lettuce, sour cream and cheese to your liking. You will never go back to regular tacos. Sorry, not sorry.
